Last month I shared with you my easy-peasy 3-ingrediant recipe for Chewy Lemon COOL WHIP Cookies, and the recipe received a lot of attention on Facebook and on Pinterest…. so I thought I would follow it up with my next easy-peasy 3-ingredient recipe for peanut butter cookies! And seriously, if your kids like peanut butter cookies, you can absolutely start making them RIGHT NOW! Because all it takes is peanut butter, sugar, and eggs. That’s it!
You simply take 1 cup of peanut butter, 1 cup of sugar, and 1 egg. Put them all into a bowl and mix it together really well. Feel free to use your KitchenAid mixer if you have to…. no need to exert yourself in the heat of the summer.
Take your cookie dough, and roll into 1-inch balls. Then put some sugar on a small plate, and roll the balls of dough in the sugar (and be sure to ask your kids to do this for you… again- no need to exert yourself in the heat of the summer!)
Place the balls on a cookie sheet (I always cover mine in parchment paper), and then have another kiddo press down on each ball 2 times with a fork, making a criss-cross design. Bake at 375 degrees for 10 minutes, and allow to cool….
Before allowing the kiddos to dig in! Be sure to hide a few for yourself…. or there will be none left!
