My after-school schedule is officially insane this year! With four kids playing travel soccer, 2 playing football, 2 in horseback riding, and 1 in chess- my chauffeur hat is getting some serious mileage this year! And I would be totally unable to juggle all of this without the awesome support of friends who offer to carpool with me and take turns driving our kids to and from the fields. But the real challenge comes when its time to make dinner. Between the shuttling of children to and from practice- it can be 7pm before I walk in the door- and I have six starving mouths to feed! So I am always looking to add a quick new recipe to my “sports night” repertoire- something that I can prep in advance, pop in the oven when I get home, and have dinner on the table in under 20 minutes.

Oh- and it has to taste great too!

So when I came across this recipe for Grands Easy Taco Melts- I knew that I had to give them a try!

It all starts with a package of Pillsbury Grands Biscuits (or if you need to cook for a crowd as I do, you might want to crack open two packages!)

Next, I browned 1 1/2 lbs of ground beef, drained the grease, and added in a package of our favorite taco seasoning mix with 2/3 cup of water. I allowed that to simmer for a bit.

I took one of the biscuits, and using my rolling pin, flattened it into a 6″ round disk. I topped it with a giant spoonful of the ground beef mixture and sprinkled on some shredded taco cheese.

Then I folded the dough over the top of the beef and cheese, and sealed all of the edges.┬áMy daughters jumped in to help- and proclaimed them to look just like giant dumplings… hence the name “Taco Dumplings”!

I love that I can make tons of these all assembly-line style!

Now- at this point, if you want to stick the cookie sheets with the prepared dumplings into the fridge so that you can bake them later- you are good to go! Off you can run to do another round of pick ups and drop offs…. and when you get home, you can just pop them into a preheated 375 degree oven for 11-14 minutes and you’ll have a platter full of delicious taco dumplings!
